Sourcing the best organic and seasonal produce available and pairing it with some mean cocktails is at the core of Soulfood Mahanakhon, Wrisley’s and Lin’s first Bangkok restaurant, which took soul food from the street into a shophouse. Wrisley’s love affair with Thai cuisine started when he was a China-based journalist. Though not Thai, he has managed to find the grandmas with the best family recipes, who make, for example, the best northern sausages. It is food for the soul that goes beyond nationalism, beyond Thailand;

Appia’s hearty Roman grub was an instant hit and the partners followed up with Peppina, serving wood-fired oven pizza and great pasta in a large room with loud music: always a solid option with something for every taste bud in their growing restaurant empire.
