The most cherished recipes in Thai cuisine are those that are passed down through the generations. It is the recipes preserved within the pages of ancient Thai texts and family memorial books that Chefs Duangporn "Bo" Songvisava and Dylan Jones have discovered and shared. Songvisa and Jones met in London in 2004; in 2009, the two moved to Thailand and, with the belief that the best Thai restaurant in the world ought to be here, opened bo.lan. The research that they put into their cuisine is rooted in heritage and informed by the seasons, as they adopt the Slow Food philosophy.

In 2013, Songvisa was voted the Best Female Chef in Asia by Veuve Clicquot and in 2014 the restaurant earned a place in San Pellegrino’s 50 Best Restaurants in Asia. Since founding bo.lan they have done numerous popups worldwide from NYC to St. Moritz to Siem Reap. They also have a small bistro at Bangkok gallery RMA and have recently opened a new restaurant called ERR, serving “urban rustic Thai” food.
